A benchmark Napa Valley Cabernet Sauvignon from Dave Phinney's Orin Swift Cellars, the 2012 Palermo is a bold yet impeccably balanced expression of one of Napa's finest vintages. The nose opens with concentrated aromas of blackberry, cassis, black cherry, plum, espresso, dark cocoa, cedar, graphite, and sweet baking spices. On the palate, rich layers of ripe black fruit are complemented by notes of mocha, vanilla, tobacco, and toasted oak, supported by polished tannins and vibrant acidity. The finish is long, powerful, and elegant, offering excellent structure for continued cellaring while drinking beautifully today. Pair with grilled ribeye, filet mignon, braised short ribs, roasted lamb, or aged cheddar and Gouda.
