Morgon wines are dark plum-colored, velvety in texture, and have a fascinating mix of tastes and scents, leaving a deliciously rich taste in the mouth. They frequently have earthy, floral, cherry, and black fruit flavors, as well as a meaty, luscious mouthfeel not found in other Beaujolais wines.

Jaffelin is one of the rare houses that still make their wines in the historical heart of Beaune. Full bunches of grapes are taken to the winery in small boxes before a careful manual selection (using a 3- metres long sorting table), then conveyed to a de-stemmer and an elevator belt. This equipment is movable hence allowing us to transfer the grapes into the vats without pumping. Pumping is again avoided when filling up the barrels, which is done by gravity through two holes in the floor of the vatting-room, down to the underground cellar. The vatting-room is equipped with oval wooden tanks, ideal for reds as they are favorable to good temperature inertia for obtaining better alcoholic fermentations; stainless steel vats for other whites. The House has been led by lady winemakers for the past decade. Marinette Garnier is the current winemaker. Wood is also central to Marinette Garnier’s winemaking style. Far from altering the terroir characteristics of the wines, Marinette Garnier believes that wood is part of the Bourgogne wine style. She carefully selects the woods and cooking levels of barrels to match the characteristics of each cuvée and deliver unique wines.
